Ingredients (for 2 people):

• 2 packs of Okomen brown rice noodles
• 1 can (400g) crushed tomatoes
• 1 small onion, finely chopped
• 2 cloves garlic, minced
• 1 small carrot, finely diced
• 1 tablespoon olive oil
• 1 teaspoon dried oregano
• 1 teaspoon dried basil
• Salt and pepper to taste
• 100g bacon, prawn, or canned tuna
For Garnish:
• Fresh basil leaves
• Grated Parmesan cheese
Instructions:
1. Cook Your Choice of Protein:
• Bacon: Cut the bacon into small pieces. In a pan, cook over medium heat until crispy. Remove from pan and drain on paper towels.
• Prawn: Season the prawns with salt and pepper. In a pan, heat a small amount of olive oil over medium heat. Cook the prawns until pink and opaque, about 2-3 minutes per side. Remove from heat and set aside.
• Canned Tuna: Drain the tuna and set aside. No additional cooking needed.
2. Prepare Noodles:
• Boil noodles for 90 seconds, drain and set aside.
3. Prepare Sauce:
• Heat olive oil in a pan over medium heat.
• Sauté chopped onion and carrot until tender.
• Add minced garlic and cook until fragrant.
• Add crushed tomatoes and herbs. Stir to combine.
• Bring the sauce to a simmer and cook for 10-15 minutes until it thickens slightly.
• Season with salt and pepper to taste.
• Add the cooked protein (bacon, prawn, or canned tuna) to the sauce. Simmer for another 5 minutes if using bacon or prawns. If using tuna, gently fold in just before serving.
4. Combine:
• Add the cooked Okomen noodles to the sauce.
• Toss gently to coat the noodles with the sauce.
• Garnish with fresh basil leaves and grated Parmesan cheese. Enjoy!
