Easy Chewy Okomen Pho Recipe

Ingredients (for 2 people):

  • 2 packs of Okomen white or brown rice noodles
  • 4 cups pho broth (you can often find pho broth for sale at Vietnamese restaurants)
  • 200g thinly sliced beef (such as sirloin or flank steak) or chicken breast

For Garnish and Serving:

  • Fresh coriander
  • Fresh Vietnamese basil
  • Bean sprouts
  • Lime wedges
  • Sliced jalapeños
  • Hoisin sauce
  • Sriracha sauce

Instructions:

    1. Prepare the Broth:
      • Heat the pho broth in a pot over medium heat until it comes to a gentle simmer.
    2. Prepare the Protein:
      • If using beef, ensure it is thinly sliced so it can cook quickly in the hot broth.
      • If using chicken breast, cook it in the simmering broth until done, then remove and shred or slice thinly.
    3. Prepare the Noodles:
      • Boil noodles for 90 seconds and drain.
    4. Assemble the Pho:
      • Divide the cooked noodles between two bowls.
      • Arrange the thinly sliced beef or cooked chicken on top of the noodles.
      • Pour the hot broth over the noodles and meat to cook the beef or heat the chicken.
    5. Garnish and Serve:
      • Garnish with fresh coriander, basil leaves, and bean sprouts.
      • Serve with lime wedges, sliced jalapeños, hoisin sauce, and sriracha sauce on the side.

Notes:  Pho can be customised with your favourite toppings, such as thinly sliced onions, spring onions, or fresh mint.
