Ingredients (for 2 people):

- 2 packs of Okomen white or brown rice noodles
- 4 cups pho broth (you can often find pho broth for sale at Vietnamese restaurants)
- 200g thinly sliced beef (such as sirloin or flank steak) or chicken breast
For Garnish and Serving:
- Fresh coriander
- Fresh Vietnamese basil
- Bean sprouts
- Lime wedges
- Sliced jalapeños
- Hoisin sauce
- Sriracha sauce
Instructions:

- Prepare the Broth:
- Heat the pho broth in a pot over medium heat until it comes to a gentle simmer.
- Prepare the Protein:
- If using beef, ensure it is thinly sliced so it can cook quickly in the hot broth.
- If using chicken breast, cook it in the simmering broth until done, then remove and shred or slice thinly.
- Prepare the Noodles:
- Boil noodles for 90 seconds and drain.
- Assemble the Pho:
- Divide the cooked noodles between two bowls.
- Arrange the thinly sliced beef or cooked chicken on top of the noodles.
- Pour the hot broth over the noodles and meat to cook the beef or heat the chicken.
- Garnish and Serve:
- Garnish with fresh coriander, basil leaves, and bean sprouts.
- Serve with lime wedges, sliced jalapeños, hoisin sauce, and sriracha sauce on the side.

Notes: Pho can be customised with your favourite toppings, such as thinly sliced onions, spring onions, or fresh mint.
